During the winter bamboo shoot season, there is always a dish on our Suzhou table-"Pickled Duxian". Marinated means marinated bacon; fresh means fresh meat; "benevolent", in our Wu dialect, means simmering over a small fire. Marinated meat, fresh meat, and winter bamboo shoots are put together for a "rest for a break," which is the "fresh eyebrows falling off".

4. Blanch the winter bamboo shoots in boiling water for two minutes and remove them to remove the astringency

5. Lettuce salted for preparation

6. Add water to the pot, add enough, put green onion and ginger, pour the cooking wine
