Pickled Pepper Chinese Fish

Clean the mandarin fish, drain the water, add some salt, cooking wine, and basil leaves to marinate for about 10 minutes.

Heat the pan, add oil, and fry the mandarin fish.

After frying on both sides, add green onion and ginger to stir fragrantly.

Then add the Guilin chili sauce to stir up the red oil.

Then add the right amount of boiling water, and add the right amount of sugar, braised soy sauce, pickled peppers and rice vinegar.

Simmer on low heat for 10 minutes, then turn on high heat to collect the juice until the juice thickens.

Finally, sprinkle with crushed red pepper and serve on a pan.
Tips:
1. When frying fish, be sure to fry it thoroughly and fragrantly.
2. The scallion and ginger should be simmered for a fragrance.
3. When frying Guilin chili sauce, stir-fry on low heat to get the red oil.
4. The fish needs to be simmered slowly to make it more delicious.
