Pineapple Baked Rice

Prepare the ingredients

Remove 1/3 of the pineapple and slice it, cut the flesh, take it out and set aside

Put a little oil in the pot, sauté the chopped onions, and fry the thawed mixed vegetables (mixed frozen vegetables of peas, corn, and carrots, available in supermarkets).

Add pineapple, minced shrimp and rice, stir fry evenly, soften the pineapple, discolor the shrimp, and stir-fry the rice.

Put the fried rice into the pineapple skin container from which the pineapple meat has been dug out

Spread a layer of cut cheese on top, preheat the oven at 170°-180° for about 15 minutes, and the cheese will melt.
Tips:
1. When digging the flesh of the pineapple, do not dig the outer skin, use a knife and spoon to assist it
2. Assorted dishes are more convenient, you can match the vegetables with fried rice
3. You can also put some cheese in the fried rice to make the flavor stronger
