Pineapple Baked Rice

Rinse the pineapple skin with water and wipe dry. Cut it vertically from one third.

Take out the pulp, soak in salt water for 20 minutes, remove and drain.

Dice carrots, onions, cucumbers, ham and pineapple.

Put oil in the pan, pour diced onion and ham and fry until fragrant, then add diced carrots, diced cucumbers, and diced pineapple, stir-fry evenly, pour in rice, continue to stir-fry, add a little curry powder and salt at the end.

Stir-fry evenly and put it into a pineapple container.

Spread a layer of mozzarella cheese on the pineapple fried rice.

Put it in the preheated oven, heat up and down at 200 degrees, bake the middle layer for about 10 minutes, and the mozzarella will melt.
Tips:
1. It tastes better with overnight rice.
2. Pineapple is easy to produce water after high-temperature cooking, so the stir-frying time should not be too long.
