Pineapple Eight Treasure Rice
1.
Soak the rice in water for at least 4 hours, and soak the red beans for more than 12 hours. Boil the rice in a pot for five minutes, remove it, and steam it on a basket for ten minutes. Boil the red adzuki beans in a pot, being careful not to get too much water, just not pass the red adzuki beans. Bring to a high heat, simmer on low heat until the water is almost dry, then add brown sugar and use a spatula to smash the beans into olive oil to make the bean paste soft and red. The red dates are boiled for five minutes and then peeled and added to the mashed red bean paste.
2.
Cut the pineapple, hollow out the middle pulp, and prepare to fill the cooked rice and red bean paste.
3.
Mix the steamed glutinous rice, bean paste, raisins, and wolfberry into the hollowed out pineapple, steam for 15 minutes and take out.
4.
The bright and aromatic pineapple eight-treasure rice is finished, and enjoy it now.
