Pineapple Fried Rice
1.
Ingredients: half a pineapple, 6-8 shrimps, 300 grams rice.
A small onion, two garlic cloves, a few cashews, a few raisins, a few peas, 3 grams of salt, a little chicken essence, and a little pepper.
2.
First, dig out the pineapple meat, and make a container for pineapple rice by the way. Choose fully-ripe pineapple, which tastes sweet and not astringent. Cut it in half.
3.
Cut the pineapple meat into squares with a knife.
4.
Use a spoon to dig out the pineapple meat. The fully cooked pineapple is easy to dig, so you can easily take out the pineapple meat. If your pineapple meat can't be digged, the pineapple you bought is not cooked enough and the taste will be astringent.
5.
Dig out the pineapple meat. This half of the pineapple can be used as a utensil for pineapple rice.
6.
Prepare the rest of the ingredients. The fully-ripe pineapple does not need to be soaked in salt water and has no astringency. If the astringency is strong, you need to soak in salt water in advance, but I don't like pineapple that has been soaked in salt water.
7.
Peel the shrimp, leaving the shrimp tails unpeeled.
8.
Put a little oil in the pot, strip the shrimp balls, wait until the shrimps turn pink until they are fully cooked, remove from the heat and set aside.
9.
Put a little oil in the new pan, add garlic and minced onions and sauté until fragrant.
10.
Add the shrimp oil produced when the shrimp is peeled, so that the pineapple rice is slightly red. If the shrimp you bought does not have the shrimp oil, you can omit it.
11.
Add rice and green beans and stir-fry evenly.
12.
Add salt, pepper and chicken essence to taste.
13.
Add cashew nuts, raisins, and shrimp, and finally add pineapple, sauté on high heat, and stir-fry until evenly.
TIPS: Pineapple cannot be fried for too long.
14.
Finally, put the pineapple rice into half a pineapple, and it's done~
