Rice layer is a snack in my hometown. It tastes sweet and crunchy; almost everyone will make it before the Spring Festival, and then use it to worship God on New Year’s Eve. I didn’t live well in the old days, so my family made more of it every time I made it, and then sealed it up and used it as a regular snack.

Popcorn

1. Mix high-gluten flour, eggs, baking powder, and warm water

2. Knead until it forms a dough, then let it rest for 20 minutes

3. Take out and knead for about 10 minutes until the dough is smooth

4. Roll out the dough with a rolling pin

5. Stack it up and cut into thin strips

6. Sprinkle some cornstarch to spread

7. Heat the oil, put the noodles into the fry in batches, the noodles will expand and float quickly after being in the oil, and remove them when they are fried until the noodles are golden red

8. Lift oil control

9. Pour water into the pot, add a piece of sugar and stir while cooking on low heat, about 15 minutes, cook until the syrup becomes viscous, pick it up with chopsticks to pull out the silk

10. Quickly pour the noodles into the syrup and stir-fry them evenly

11. Quickly pour the noodles into a container that has been wrapped in tin foil, and flatten and compact it firmly

12. Let cool and cut into pieces

Tips:

Adding baking powder can make the taste more bulky, or not.
Step 11 If you don't use tin foil as the bottom, you can also sweep a layer of oil to prevent sticking.
