Pork Belly Wrapped in Chicken Soup (one Soup and Two Dishes)
1.
Prepare the ingredients first: 1 pork belly, 1 light chicken, dangshen, Beiqi, wolfberry, lily, white pepper, 2 red dates, 2 small pieces of tangerine peel, and 2 small pieces of ginger.
2.
The next most complicated step is to clean the pig's belly. Remove the fat from the outer layer of the pork belly, and then flip the inside of the pork belly to clean it. Add starch to rub and wash. I'm afraid it won't clean. I used fixed powder to rub and wash and repeat it several times!
3.
After washing it with starch, I went to the white wine and salted it for 10 minutes. Rub and wash to remove the fishy smell. After washing, the hands no longer smell of pork belly. This is what my dad taught. Hee hee
4.
Clean the bare chicken, I have removed the chicken head and butt. Straighten the cleaned pork belly, open a port of the pork belly slightly, and slowly stuff the chicken into the pig belly.
5.
After wrapping the whole chicken into the pork belly, use a toothpick to sew the mouth.
6.
Put it in a pot and boil with cold water to get rid of blood. Bring to a boil, pour out and wash with cold water for later use.
7.
Put all the ingredients in a casserole and boil, after the water is boiled, reduce the heat to a slow cooker. It takes about two hours to cook!
8.
The oil will be out of the soup in about an hour, and I remove the froth while boiling it.
9.
Two hours later, the fragrant pork belly-wrapped chicken soup is ready, is there any drooling! Remove the pork belly and chicken, let cool and prepare to cut into pieces!
10.
Haha, it's cut. The chicken is whole, hehe.
11.
I have made the dipping sauce, this can be adjusted according to personal preference! What I adjust is: sauté the shallots and ginger in a pan with oil, then add soy sauce, oil, salt, sugar, pepper, and coriander to stir.
12.
After the vegetables were cut, they were cold. I steamed the vegetables again in a steamer. Two meat dishes in one soup, and a stir-fried green vegetable to start the meal!
Tips:
You can cut the pork belly and chicken directly back into the soup pot according to your own preferences. My family is more economical, so I use it directly for cooking. Hehe.
