Pork Feet with Ginger Vinegar Egg

Peel the ginger, wash it, slice it or pat it.

Pour the ginger into the pot and sauté the water on a low heat (no need to pour oil).

Take a casserole, pour in sweet vinegar, bring to a boil, then add ginger slices and brown sugar, bring to a boil, turn to low heat, and cook for another half an hour.

Add the boiled and peeled eggs to the pot and keep on low heat for half an hour.

After half an hour, turn off the heat and let the ginger slices and eggs soak in the vinegar overnight.

Treat the pig's trotters the next day: wash the pig's trotters to remove hair and chop them, blanch them in water, then fry the water in a wok and set aside.

Bring the vinegar to a boil.

After the vinegar is boiled, put in the trotters. After the high heat is boiled, turn the heat to low for an hour.

Tips:
Sweet glutinous rice vinegar can be replaced with diced sweet vinegar, which tastes better. I can't buy it here. I can only use glutinous rice sweet vinegar.
