Pork Knuckle with Secret Sauce

Wash the pork knuckle, put the pork knuckle in the pot, add cold water to the pork knuckle, put 2 slices of ginger, 50 grams of cooking wine, 2 grams of pepper.

Without covering the pot, bring to a boil over high heat and cook for three or four minutes, turning the pork knuckle over in the middle.

Prepare 3 dried red peppers, 3 star anises, 2 grass fruits, 4 bay leaves, 2 ginger, and 3 green onions. I forgot to write scallions, so I used scallions. Green onions are more fragrant.

Prepare the sauce: 150 grams of glutinous rice, 100 grams of soybean paste, 20 grams of cooking wine, 60 grams of soy sauce, 20 grams of soy sauce, 50 grams of rock sugar, and 50 grams of bean paste.
