Sauce Elbow

Wash the elbows, remove the pig hair on the top, soak in water for 1 hour, then blanch in cold water until the elbows change color and remove

Heat a wok, add cooking oil, add all the dry spices, and fry on low heat until the spices turn brown

Add boiled elbows and water to a saucepan, add green onion, ginger, light soy sauce, red yeast rice, rock sugar and cooking wine, boil over high heat, add edible oil and stir fragrant seasoning oil after the water is boiled

Simmer on medium heat for 15 minutes, then turn to low heat and simmer for 2 hours, turn off the heat and add salt, cover and simmer for 5-12 hours to let it taste
