Pork Knuckles and Ginger Vinegar

I used half of the old ginger. The old ginger is more spicy to bite. If you want more spicy, you can add more ginger.

Cut thick slices for later use.

Boil the pig's feet in cold water, simmer for 10 minutes, and cook for a long time to remove the oil.

Add the ginger slices in a dry pan, fry the water and set aside.

The same goes for the moisture of the pig's knuckles in a dry pan.

Put the sliced ginger under the bottom of the pot, then put the pig's feet, add vinegar (I use Haitian sweet vinegar), one bottle just can submerge the pig's feet.

Boil eggs in a pot under cold water, boil over medium and low heat for 9 minutes, soak in cold water to remove the shells.

Put it in the pig's feet.
Tips:
1. No need to add any seasoning or water.
2. Since I don’t have a clay pot, I use an electric casserole. I cook the electric casserole for 2 hours.
3. The egg can't be submerged in vinegar, so you can turn the egg over after boiling for a period of time.
4. When eating, use a spoon to dry the water.
