Potato Stew
1.
Cut pork belly and potatoes into pieces
2.
Slice ginger, cut chili into inch sections, chop green garlic, star anise, and set aside
3.
The potatoes are deep-fried until they are five mature (the oil is used to make the potatoes have a full coating and will not smash in the soup during the braising process, and they will taste better)
4.
Leave a little oil in the pot and stir-fry the pork belly, ginger slices, star anise, and peppercorns.
5.
Stir-fry pork belly until golden brown, add a little dark soy sauce, add chili and stir-fry together
6.
Add an appropriate amount of water (the pork belly is drunk)
7.
Change to medium heat stew
8.
Boil until there is one third of the soup
9.
Add the fried potatoes and simmer together, add some salt
10.
Stir-fry potatoes with tender potatoes, green garlic and chicken powder
