Private Domineering Grilled Fish

The head of the grass carp is removed and cut into slices. The fish is obliquely cut with a knife edge to facilitate the taste. Sprinkle salt, pepper, and cooking wine on the fish, spread them evenly, add green onions, ginger, and garlic, and marinate the fish for two hours.

Put the fish in the grill pan, pour the oil into the pan to heat, and pour the hot oil on the fish. Then put the baking tray in the oven and bake at 210 degrees for 40 minutes.

Pour oil into the pot, add Chinese pepper, aniseed, dried chili, add two spoons of Pixian bean paste and stir fry until fragrant. Low heat throughout.

Pour in the other side dishes in the main ingredient, stir-fry for color, and get out of the pot when it is half cooked.

In a separate pot, pour a large amount of oil, add a spoonful of Pixian bean paste, a large amount of dried chilies and Chinese pepper, heat for a few seconds on low heat, and pour the hot oil with chili on the fish. Sprinkle coriander on the surface at the end, plug in the electricity and simmer until the vegetables are cooked.
Tips:
1. Choose grass carp with tender meat, and the grilled fish will be delicious.
2. The salt of the fish body should not be less, otherwise the salty taste will not enter the meat, and the finished product will tasteless. Onion, ginger and garlic can get rid of the fishy smell, it is essential.
3. The fish must be topped with hot oil, which can instantly cook the aroma, so that the surface of the grilled fish will be scorched.
4. If there are many side dishes, do not pour them all at once. It is best to stir-fry in batches, that is, add a spoonful of Pixian bean paste every time, add two kinds of side dishes and fry them. It is easy to taste evenly.
5. Pixian Doubanjiang itself contains salt, and because the side dishes are fried separately, it can ensure that each food has a salty taste, so there is no need to add salt.
6. When using a lot of peppers at the end, do not heat them for too long, otherwise the peppers will turn black and affect the appearance.
7. I used the electric hot pot, I can cook some dishes while cooking, and also ensure that the dishes are always hot and won't affect the taste due to cooling. If you don’t have an electric hot pot at home, it is best to fry the vegetables before serving.
8. The soup in the dish must not be less. If you soak the fish in more soup, the taste will be better. Adding the stock will taste more delicious. If there is no stock, add boiling water directly.
9. If you like spicy flavor, you can use sesame pepper instead of pepper.
