Private Recipe-homemade French Mayonnaise (success Trick)
1.
Ingredients: French mustard sauce (yellow, can not be replaced with green Japanese mustard)
2.
In a clean, oil-free bowl, add 1 egg yolk, add French mustard sauce of the same amount and temperature as the egg yolk, and stir evenly with a whisk.
3.
While stirring, add about 10ml of olive oil (add a little bit, keep stirring to prevent separation of oil and egg yolk)
4.
Continue to add oil little by little while stirring vigorously in one direction
5.
When adding about half of the olive oil, add 2 teaspoons of salt and 1.5 teaspoons of white pepper (you can add or subtract according to your taste)
6.
Continue to add olive oil while stirring in the same direction (this time the egg liquid will become more and more viscous, and the stirring will become more and more laborious.)
7.
Stir until the mayonnaise is semi-solidified, and that's it.

[Success Tips]
1. The weight of egg yolk and French mustard is 1:1, and it must be at the same temperature (take it out of the refrigerator at the same time, or at room temperature at the same time).
2. It is best to use egg yolks only, or whole eggs, but it is easy to separate liquid and quality.
3. When adding the oil at first, be sure to add a little bit, and keep stirring while adding to prevent the oil and the egg yolk from separating.
4. When stirring, face the same direction.
5. Use olive oil instead of ordinary vegetable oil to make mayonnaise, the taste is different! If you can't use all olive oil, you can use ordinary vegetable oil: olive oil=1:1, add ordinary vegetable oil when mixing at the beginning, and change to olive oil when it reaches half.
6. French mustard (shown in yellow) cannot be replaced by Japanese mustard (green). The taste will completely change... Generally available in supermarkets, if you can’t find it, the universal TB is available online^_^
