Soak the amaranth in boiling water for 1 to 2 hours. If it is dark, rub it with your hands.

Sprinkle salt evenly on the flour, then pour in the amaranth juice and make the dough a little harder and smoother, and leave it on for half an hour.

Use a rolling pin to roll into thin noodles.

Use noodles that are cut to the width of one finger, shake them with your hands, and put some flour to prevent stickiness.

Tips:
