Purple Potato Toast Sandwich

Blanch corn, diced carrots, and peas. (I used the ready-made corn kernels bought in the supermarket, with a small amount of diced carrots and peas); cooked purple potatoes were peeled and pressed into puree; cooked eggs were diced

Put corn, diced carrots, peas and egg cubes in the mashed purple potato, mix well to form a mashed purple potato with mixed vegetables; cut off the hard edges of the toast slices, and put on the salad dressing
3.
Spread a layer of mashed purple potato with mixed vegetables, then take a slice of toast, spread on the salad dressing, cover it; cut into small pieces
