Purple Sweet Potato and Tremella Soup

Use scissors to cut off the yellow roots of the dry white fungus.

Cut the white fungus into pieces, the more you break the glue, the better. Soak in cold water for 2 hours.

The soaked white fungus is very slippery.

Wash the white fungus into a casserole.

Add two large bowls of water, generally the amount of water is twice that of Tremella.

Bring to a boil on high heat and then turn to low heat to simmer for 1 hour, keeping the pot slightly boiling during the process.

After 1 hour, add the cut purple potato cubes and cook for 10 minutes.

Finally, add rock sugar, stir until melted, sprinkle in wolfberry and serve.
Tips:
Tremella must be soaked in cold water in advance. It is easier to make glue after cutting it up and soaking. No casserole can be cooked with the "soup button" of the electric pressure cooker.
