Purple Sweet Potato Coconut Meal Bun

First steam the purple sweet potato, put the liquid ingredients (milk, egg, whipped cream), purple sweet potato, and sugar into the bread machine.

Then completely cover the flour on the liquid, put salt on the corner, dig a small hole in the middle of the flour, put the yeast, and start the bread machine kneading program for 15 minutes.

After adding the butter, continue the kneading process for 20 minutes.

The small meal bag does not require high dough, and does not need a glove film. Start the bread machine fermentation program (ferment for 1 hour in winter, about half an hour in summer, and the room temperature is higher, and it can be directly fermented at room temperature.)

Prove the dough to 2.5 times its size.

Divide the exhausted dough into 6 portions, cover with plastic wrap and relax for 15 minutes.

Round the dough into a large muffin mold.

Put it in the oven for the second fermentation, and ferment at 38 degrees to twice the size of the original dough.

Spread a thin layer of butter on the fermented dough and sprinkle with coconut paste.

Put it in the preheated oven, 175 degrees for 18 minutes (please refer to the temper of your own oven for time and temperature). If the surface is darker, you can cover it with a piece of tin foil.

Tips:
1. The liquid part can be adjusted according to the water absorption of the flour. If it is kneading by hand, increase the liquid by about 10 grams and add it in batches. 2. The temperature of the oven is different, please adjust the time and temperature according to your own oven.
