Yesterday, taking advantage of the cold, I made this rainbow biscuit. Every time it rains, I always think that a rainbow will appear after the rain. But this is a continuous rain, I am afraid it will be cool for a few more days.

Rainbow Cookies

1. Put the butter in a container after softening and mix well with a rubber spatula

2. Add powdered sugar

3. Stir evenly with a manual whisk

4. Add the egg liquid in two batches

5. Stir well every time

6. Sift in low-gluten flour

7. Stir from bottom to top with a spatula

8. Stir into a dough without dry powder

9. Stir it into the state as shown in the picture

10. Divide the dough equally into 5 portions

11. Add a drop of your favorite color to each serving and knead it with your hands

15. Purple pigment

16. Make all five colors, then put them on the chopping board covered with plastic wrap, and roll out into a rectangle

22. After rolling them out one by one, put them in the refrigerator and freeze for 1 hour

23. After taking it out, return to room temperature slightly, and cut off the irregular parts with a knife

24. Then slice the dough and place it on a baking tray lined with tin foil

25. Preheat the oven to 160 degrees, put it on the middle of the oven, and bake for about 20 minutes

Tips:

1. This rainbow biscuit is just a way to teach you how to make it. If you don't like pigments, you can use various natural colored powders instead, such as matcha powder, cocoa powder, cherry powder, purple potato powder, etc.;
2. This amount can make 12 biscuits of the size shown in the figure.
