Red Rice Bibimbap

Prepare the required materials.

Wash the red rice and put it in a rice cooker to cook, then let it cool slightly;

Wash the tomatoes and bake them in the oven for 15 minutes, then peel and cut into small cubes;

Roast walnuts and cashews for 3-5 minutes, then crush them; (a little fry is also okay)

Cut onion into small cubes; cut olives into rings; mince garlic; cut coriander into small pieces;

In a large bowl, add some oil to the cashews, walnuts, olives, diced tomatoes, and diced beetroot and mix;

Heat the pan, sauté the onion until soft, add the minced garlic, and sprinkle a little rosemary;

Pour the fried onions into a large bowl and mix well;
9.
Pour in red rice, season with salt and pepper, mix well, and sprinkle with coriander.
