Peel off the outermost crust

Take the part between the melon flesh and the outer hard skin, this is what we mainly use today

Shred the melon peel, marinate in salt for 10 minutes, and decant the water. Put a drop of sesame oil, add some minced red pepper to taste and garnish
Tips:
Slice and fry, shred and let cool. A simple dish at will.
