Prepare ingredients

Put the washed pork knuckles into the pot, add the cooking wine and lemon juice, blanch the water and drain

Put water in a pot, add ginger, pepper, star anise cooking wine and pork knuckles and simmer into five minutes

Add salt, light soy sauce, and dark soy sauce to a half-boiled stew, add rock sugar

Tips:
1. Putting lemon juice and cooking wine into the pork knuckles when blanching the water can remove the fishy and mutton smell
2. Add the color when the rock sugar is about to be cooked
3. Add light soy sauce and dark soy sauce according to your preference
4. If you like to eat sweet rock sugar, add more (white sugar is not recommended)
