Rock Sugar Stuffed Lotus Root

Wash the glutinous rice, dry it with water (about 1 hour), wash the lotus root, and scrape off the skin. (You don’t need to scrape, I didn’t scrape this time)

Cut it diagonally on one end of the lotus root.

Hold the lotus root with your left hand, place the rice on the lotus root, and slowly pat under the lotus root with your right hand. The rice will go in little by little. While pouring it, use chopsticks to compact it. Cut off a small piece and stuff it with a little glutinous rice.

Put back the cut lid as it is, fix it with a toothpick, and stick it in as much as possible.

Put all the lotus root stuffed with glutinous rice into the pressure cooker, put rock sugar, edible alkali, and the amount of water less than the lotus root.

Put the lid on the pressure cooker, turn on the high heat and wait for the chick sound, turn on a low heat, and cook for 20 minutes. After the pressure cooker has cooled naturally, open the lid and turn on the high heat to drain the soup.

Take out the lotus root and slice it.

Filter the remaining soup with a strainer.

Put the chopped lotus root into the plate and drizzle with the soup.
Tips:
If you like sweet, you can add a little rock sugar. The glutinous rice must be washed and dried in advance.
