Rock Sugar Sydney Kumquat Soup
1.
First prepare the ingredients you need. I used golden jujube. I was lazy and didn't pit. If the dates are bigger, they can be pitted and cut in half.
2.
Rub the kumquat with salt to remove the pesticide residue on the epidermis, and then rinse it with water for later use.
3.
Then cut the kumquat in half and remove the seeds inside.
4.
Then clean the Sydney pears and scrub the skin with salt. The Sydney pears do not need to be peeled. Cut the pears in half, remove the core, and cut into small pieces. Put the cut pears and kumquats on a plate for later use. It is best to cut Sydney before cooking, otherwise it will oxidize easily.
5.
Prepare a clean casserole, put the processed Sydney pear, kumquat and washed red dates into the casserole together.
6.
Add yellow rock sugar
7.
Pour in an appropriate amount of water.
8.
Cover the lid and bring to a boil on high heat.
9.
After the water is boiled, turn to a low heat and simmer, and simmer for about 40 minutes. The Sydney pears and kumquats will be tender.
10.
Add the washed goji berries 2 minutes before serving, and cook for 2 minutes to turn off the heat.
