Salt and Pepper Fish Belly

Prepare the materials

Remove the leaves of parsley, wash and cut into small pieces, remove the seeds of the red pepper and cut into small pieces

Pour the fish belly into 1 tablespoon of cooking wine

Add a pinch of salt and pick it up with your hands and marinate for 10 minutes

Beat the eggs and stir well

Dip the marinated fish belly into the egg liquid

Put it in the starch and roll it around, then shake off the excess powder

Pour into the hot pan 4 times the amount of oil than usual for cooking. After the oil in the pan starts to smoke, put the fish pieces in to fry

After the fish pieces are fried until golden brown, immediately remove the oil control, and then deep-fry all the remaining fish belly pieces in the same way. Finally, pour all the fish pieces into the pot and re-fry for about 1 minute.

Leave some oil on the bottom of the pot, pour in parsley and red pepper and sauté

Pour in the fried fish pieces and stir fry

Finally, sprinkle in an appropriate amount of salt and pepper to serve
Tips:
1. The fish belly must be marinated with cooking wine to remove the fishy smell;
2. Don't heat up too much when frying fish belly.
