Salt Water Bladder

Remove the bones from the hooves, soak the bleeding water with clean water, remove the water, fry the pepper and kimchi salt until slightly yellow, and then sprinkle on the hooves and rub them by hand and put them in the refrigerator for several hours.

Add some salt and water to the ginger onion, pepper, star anise, cinnamon, bay leaf and let cool.

Put in the marinated hoof and soak for about 24 hours.

Take out the soaked hooves and tie them with cotton thread and put them in a soup pot. Add cooking wine, prickly ash, boil appropriate amount of salt and water on high heat, turn to low heat and cook until 80% cooked (do not soak the hooves in water).

Take out the hoof and let cool.

Slice and serve on a plate.
Tips:
The hoof must be soaked in bleeding water (about 2 hours, and the water needs to be changed halfway) to get rid of it.
Pickling and soaking time is based on your own time (short soaking time, a little more salt during cooking, and longer soaking time with less salt).
Don't cook the hoof too badly so as not to affect the taste.
