Salted Egg Boiled Red Amaranth Soup

A handful of fresh red amaranth.

Prepare salted duck eggs, ham sausage, and garlic.

Remove the old leaves and stems of the red amaranth, wash it, and soak it in light salt water for 10 minutes, then remove it and drain it.

The salted duck eggs are shelled and cut into small pieces, the ham sausage is cut into small pieces, and the garlic is minced.

Pour edible oil into the pot and let the garlic saute when it is 50% hot.

Lay salted duck eggs and ham sausage.

Stir-fry over medium and small heat until the salted duck eggs are fried.

Add appropriate amount of water and bring to a boil.

Add red amaranth.

Boil for about 2 minutes, add refined salt when the red amaranth becomes soft.

Season with white pepper.
12.
Turn off the heat and fill the bowl.
Tips:
1: Because the salted duck egg has a salty taste, the salt should not be too much in the later stage.
2: Ham sausage can also be replaced with minced meat.
3: White pepper can remove fishy and improve freshness.
