Salted Egg Yolk Pork Floss
1.
Salted egg yolk steamed in the basket for 5 minutes
2.
The chicken floss I made by myself is made for babies, and it tastes very weak and crumbly, so 4 salted egg yolks are added. If the floss is saltier, you can add 2 egg yolks.
3.
Crush the salted egg yolk and mix it evenly with the pork floss. The pork floss I made is relatively dry, so I added a small amount of olive oil to make it into a ball. This kind of group will disperse as soon as you pinch it
4.
Divide the stuffing into 4 portions, group them into a group for later use
5.
The glutinous rice flour is very clear and the noodles are ready
6.
Put both types of flour in the basin
7.
The green wheat seedlings are blanched in light salt water for about one minute to remove the green and astringent taste, and the color is also very beautiful
8.
Chop the wheat seedlings, add 100 grams of water, and put them in a wall breaker to beat them into a paste. 90 grams is practical, but because there will be residues in the machine, I added 10 grams more
9.
Filter with a mesh sieve, and be sure to dry the residue to ensure that enough juice comes out
10.
Pour the green wort into the flour
11.
After mixing into a dough, add a little oil, the dough will be more moisturized by adding a little oil
12.
Knead into a smooth dough
13.
Steam in the basket for 20 minutes. The surface of the steamed dough looks pale, but the color inside is green
14.
Spread a little oil on the cling film, I used a spoon to take an appropriate amount of dough and put it directly on the cling film, then put the fillings, and wrap it tightly with the cling film.
15.
The color of the Qingtuan of Green Wheat is a little lighter than that of Yinchen and Ai Ye. The largest one on the right is meat floss, which is slightly lighter in color, while the one on the left is pureed jujube, and the skin is Yinchen and darker.
Tips:
1. The noodles are wheat starch, if not, you can use sweet potato starch instead.
2. The steamed dough is very sticky, do not grab it with water, and grease the plastic wrap, otherwise it will be troublesome to stick to your hands.
