Sauce Big Bone

Soak the pork bones for two hours, wash and remove. Add cold water to the pot, put the big bones in the pot and boil, skimming the foam.

Add appropriate amount of cooking wine, cook for seven or eight minutes and turn off the heat.

Take another pot, add the brine and boil.
4.
Rinse the pork bones and put them in the brine pot.
5.
Brine for 20 to 30 minutes, soak overnight and remove.
6.
Sauce big bones.
