Yai Shan Big Bone Soup

Wash yam, peel and cut into sections.

Wash the pig bones.

Put the pork bones in a pot under cold water.

Boil the water and set aside.

Boil water in a casserole and put the pork bones.

Bring to a boil on high heat, turn to low heat and cook for 1 and a half hours.

Turn to high heat and add yam and red dates.

Bring to a boil again, turn to low heat and cook for about 30 minutes.

Add salt to taste, turn off the heat and serve.
Tips:
Use yam to stew, and finally add yam after the soup is boiling, and boil over high heat, then turn to low heat. Because yam contains polyphenol oxidase, the enzyme properties will be broken if it is boiled for a long time. So, boil the bone broth first before making the yam.
