First put all the ingredients of the medium dough into the bread machine according to the method of liquid first, then flour. Note that the salt is placed in the corner of the bread machine, a hole is dug in the middle of the flour, and the yeast is poured in. The bread machine starts a dough mixing program. The kneading function of my bread machine is 13 minutes at a time.

When the kneading function ends, cover the bread maker with plastic wrap and start the fermentation function. You can also put the dough in the refrigerator freezer for about 20 hours for low-temperature fermentation.

When the dough is about 2-2.5 times as big as the original dough.

Take the medium dough out of the bread machine, and put all the main dough materials except butter into the bread machine.

Tear the middle kind of dough into small pieces and place it on top of the main dough to activate a kneading function.

Put in the softened butter cubes at the end of the kneading function. Start a kneading function, my bread machine kneading function can be adjusted, I adjust it for 30 minutes

After the kneading process is over, cut a small piece of dough and open it by hand to check whether the dough has been kneaded to the complete stage. It can be held into a glove film that is not easy to break, and the dough is completed by kneading.

Round the dough in the bread machine and put it in a warm place and let it stand for 30-40 minutes. Cold weather can start the fermentation function of the bread machine.

The dough can be fermented to 2-2.5 times larger. Take out the dough and press to exhaust, you can also start the bread machine and dough function. I used a rolling pin to roll it directly.

Divide the exhausted dough into 9 equal parts. Knead round, cover with plastic wrap and relax for 15 minutes.

Roll the loose dough into an oval shape.

Roll up the dough from top to bottom.

Roll into a long strip with a thick middle and thin sides. Enclose both ends and pinch the interface tightly by hand.

After all the dough is made, place it in a baking pan lined with greased paper. Arrange it so that you don’t put it too tightly, or the bread will stick together.

Put the baking pan into the upper level of the oven, and sit a pot of hot water under the baking pan. Close the oven door for a second fermentation. No need to turn on the oven fermentation function. If the temperature in the oven becomes low in the middle and the bread dough is not in a satisfactory state, you can change the hot water again.

While waiting for the second delivery of the bread, other things can be prepared. Put the ketchup and salad dressing into the piping bag separately. If there is no piping bag, you can apply the ketchup and salad dressing directly on the bread at that time.

Chop the green onion leaves and add a few drops of egg yolk. Add a few drops of milk to the egg yolk, stir well, and set aside.

When the bread embryo ferments to twice the size of the original dough, it is fine. At this time, take out the bread dough and preheat the oven to 180 degrees.

Ketchup and salad dressing are squeezed back and forth on the surface of the bread embryo. If you don't have a piping bag, you can use a spoon to spread the ketchup and salad dressing on the surface of the bread, but I personally think that it will look better with a piping bag.

Put the baking tray into the middle layer of the preheated oven and bake at 180 degrees for 20 minutes.

Tips:
1. In fact, kneading dough does not necessarily have to pursue a glove film, as long as the kneading reaches the complete stage. If it is stretched to form a thin film, it will crack, as long as the crack is smooth. I tried the same recipe without kneading the glove film, but the bread was still soft. 2. Because my oven has a low heat and a high heat, I adjusted the lower heat 150 and the upper heat 200. You must set the baking time according to the temperature of your home oven.
