Seaweed Pork Ribs Soup
1.
Wash the fresh ribs you bought back under cold water in a pot of water.
2.
Wait until the water in the pot bubbling and the ribs change color, turn off the heat and rinse with cold water again.
3.
Soak the bought dried kelp in cold water, wash it and cut it into small pieces, and put it in a pot of cold water. Just two or three minutes after the water has boiled.
4.
Put the water-filled ribs and kelp into an electric pressure cooker and cool the kelp horizontally. Then add a few drops of white vinegar, put in a few slices of ginger, garlic cloves, cover the pot and turn on the power, press the button for boiling soup to start working.
5.
Open the lid of the soup pot and add a little salt to taste and set it on a plate. (There is no need to add seasonings such as chicken essence and monosodium glutamate, because the soup itself has the umami flavor of seafood and the meaty aroma of ribs.)
Tips:
Generally, when we cook kelp soup, we recommend that you buy dried kelp, take a look and touch it (one look: the greenish kind is better, the yellowish kind is easy to mess up when washed with water; second touch: The harder ones are better to touch with your hands, and are more washable and boil-resistant).
