Shajiang Chicken Kidney

Buy the chicken kidney, blanch it in clean boiling water and set aside for later use.

Shajiang is not fresh and must be soaked in water for more than one hour.
3.
Pour olive oil into the hot pot and saute the ginger first.
4.
Pour the chicken kidneys and stir fry.
5.
Add light soy sauce, sugar, cooking wine, pepper and half a bowl of water, cover the pot and simmer.
6.
Simmer until the water is dry and ready to serve.
