Noodles and Castanopsis is a folk home-cooked delicacy in the alpine region of north-central Shanxi. It is now popular as a miscellaneous grain snack in restaurants.

Shanxi Noodles and Castanopsis

1. Put 200 grams of naked oatmeal and 2 grams of salt into the mixing bowl.

2. Just boil the hot water, pour it on the naked oat flour in batches, while pouring, use chopsticks to mix the water and the naked oat flour evenly to form a noodle-like flocculent

3. Use chopsticks to mix the naked oat flour and water evenly to form a dough with 1/10 dry flour

4. Use your hands to fuse all the dough and dry powder together and knead it into a smooth dough. Cover with plastic wrap or cover to wake up for about 10 minutes

5. Roll the dough into a strip. Divide into small doses of about 5 grams. Two palms are facing each other and rub the machine in the palm of your hand to form a smooth oval-shaped agent

6. Place the machine on the shore, press the palm down on the machine, push forward with appropriate force, press the palm of your hand, you can see that the end of the machine is pressed into a thin sheet. 7. Put the leaning grandma on the steamer. Steam in the steamer for about 20 minutes.

Tips:

1. Make sure to use boiling water to make the noodles. Stir while pouring water to make the naked oat flour flocculent. Only 1/10 of the dried noodles are kneaded into a dough.
