I made such a bowl of noodles for my son when I was at my mother-in-law’s house in Shaoxing. My son thought it was too delicious. He even drank the noodle soup. After I came back, I made it for my son. My son said mom, you must make a different dish. It’s delicious at grandma’s house, hey, my son, mom even brought home the pickle jars from grandma’s house.

Shaoxing Version of Pickled Vegetable Noodles

1. Wash the vegetables and cut into sections

2. From the frying pan, pour the carrots and eryngii mushrooms

3. Stir fry and add pickles

4. Then add water

5. Cook for three minutes

6. Add dried noodles

7. The boiled noodles become soft, add green vegetables and boil again

Tips:

Note: Add pickles, so no need to add salt
