Shrimp and Roasted Winter Melon

Peel and remove the winter melon, cut into about 5mm thick slices, wash and drain the water for later use; cut the scallion into sections, then cut in half; cut the scallion into sections, soak the dried shrimp in water for a while

Pour an appropriate amount of oil into the pot to heat up, then add the scallions and stir slowly over a low heat

Stir the scallions until slightly charred, remove the scallions

Turn to high heat, add winter melon cubes and stir-fry for a while

Add dried shrimps and stir-fry evenly

Cook in Shaoxing wine, add salt, green onion and stir fry until winter melon is about nine mature

Add sesame oil and chicken powder, stir fry, and get out of the pan.
Tips:
1. Cut the scallion into sections and then cut it in half to make it easier for the aroma to come out when the scallion is sautéed. If you find it troublesome, you can just saute the scallions directly;
2. After the scallion is cooked until slightly charred, remove the scallion and do not use it. If it is mixed in and stir-fried, it will easily produce a bitter taste, which will affect the taste;
3. Shrimp has a salty taste, so the amount of salt should be adjusted according to your own taste;
4. For those who like soft and bitter taste, the winter melon can be fried for a while. If you don't like too bad, you can shorten the stir-frying time.
