Sichuan Cold Noodles

First wash the mung bean sprouts and boil them in boiling water.

Boil a pot of boiling water in a boiling pot, put the water in the water and boil for 40 seconds, remove the water to drain, pour an appropriate amount of rapeseed oil into the noodles, mix the noodles and oil with chopsticks, and blow cool.

Enlarge the cold noodles and bean sprouts in a bowl, pour light soy sauce, vinegar, sugar, pepper noodles, sesame oil, chili oil and garlic paste on the noodles, mix well and serve.
Tips:
1. You can control the softness and hardness of the noodles by yourself, but do not cook for more than one minute. The noodles are too soft and not tasty.
2. It's better to have sesame sauce and it will be more fragrant. You can mix the sesame paste with cold boiled water before adding it. The best is white tahini.
