Sichuan Style Fried Sauce

Wash the shallots, mince ginger, mince watercress

Heat the pan, pour in the minced meat, stir fry until the oil comes out, and the minced meat is slightly browned.

Stir fry all the time, then add ginger, stir fry evenly, and start the pot.

With the oil from the fried meat, put the chopped watercress into the pot and stir-fry evenly.

Pour in the minced meat and continue to fry until the aroma is obtained, and the watercress is fried evenly.

Add a small bowl of water and simmer for ten minutes.

Tips:
1. The meat must be stir-fried continuously, and the whole process must be stir-fried continuously. If there is little fat, add some oil appropriately
2. When eating, scoop out an appropriate amount of fried sauce and stir-fry in the pot. During the process of frying, you can add some pepper to taste, or add some starch to thicken.
3. You don't need to add salt to the noodles, because the watercress is very flavorful. Add MSG, pepper, chili (whoever tastes it), green onions, coriander, and minced garlic. You can add some soy sauce if you have a big taste or add soup.
