Toothpick meat is a Sichuan-style snack. It is crispy on the outside, tender on the inside, crispy and delicious, bright in color, and has different flavors such as hemp, spicy, salty and sweet. Toothpick meat can be made with lean parts of pork, chicken, and lamb. The lean pork that I chose today is also close to Sichuan in taste, but it seems red, but not spicy, even children and the elderly can accept it. of

Sichuan Toothpick Meat

1. Prepare the relevant ingredients, and forgot to add the peppercorns

2. Wash and drain the lean pork

3. Cut slices

4. Cut it and put it in a bowl: add salt, sugar, cooking wine, starch, oyster sauce, cumin powder, and marinate for more than 20 minutes

5. While marinating, prepare the actual seasoning

6. Fold the meat slices repeatedly and string them with toothpicks

7. Heat the wok, pour in canola oil, the oil is 80% hot, and then put in the toothpick meat

8. Put in one by one, be careful of splashing oil

9. Turn on medium heat, deep fry until both sides are browned, turn off the heat

10. Pick out the drain

11. Leave a little base oil in the pot, add Chinese pepper, dried chili and half of the onion, ginger, garlic, and sauté

12. Then put in the toothpick meat, stir-fry evenly, 1~2 minutes

13. Pour in the remaining green onions, ginger, and minced garlic, sauté until fragrant, turn off the heat

Tips:

1. Toothpick meat: Pork, chicken, lamb and other meats can be used
2. The size of the meat is moderate, that is, good skewers and beautiful
3. The meat slices need to be marinated for 20 to 30 minutes in advance to be more delicious
4. The seasoning can be increased or decreased as you like, which is slightly spicy
