Simmered Cabbage

Soak the cabbage and wash.

Break into lumps.

Bring water to a boil, remember to add a spoonful of salt.

Too cool and drain.

Put the prepared cabbage cubes into a pot of boiling water, and immediately remove the seedlings when they collapse slightly and put them in the cold water prepared in advance.

No photos were taken at this step: the pot was heated, the oil was heated to 60% heat, the pepper was put on to burn the fragrance, the pepper was removed, and the oil was heated to 90% heat.

After draining the water, add salt, sugar and white vinegar, pour the hot oil evenly on the vegetables, add chicken powder and mix evenly.

This is the chili version. It only takes one more step. Place the sliced chili on the dish and pour hot oil on it.
Tips:
I want to say two things here:
1 Boil the vegetables with boiling water and salt, the purpose is to keep the green color of the vegetables.
2 Quickly dip the vegetables into cold water and cool them down, in order to maintain the crisp taste of the dishes (depending on the person who eats them).
