Skin Jelly

Soak the pigskin first, then put it in cold water, boil it for five minutes, remove it, rinse with cold water to remove excess fat, pull out the hair on the pigskin, and cut into thin strips.

Put green onions, ginger, cooking wine in the water, open the water to the pigskin, cook for 20 minutes, remove the pigskin.

Add 1 times the amount of water to the pot, add green onions, ginger, and pig skin to the pig skin. Turn the high heat to a low heat for 1 hour or more. Add salt and soy sauce 10 minutes before cooking.

Put it in the fresh-keeping box to cool naturally, or put it in the refrigerator.

Cut the skin jelly into pieces, add the minced garlic, light soy sauce, sesame oil, spicy soy sauce, and vinegar and stir well.
Tips:
If the skin is too hard when plucking the pig hair, you can soak it in hot water.
Be sure to cook the second side to cook out the excess fat.
