Small Stew Noodles

Wash the pork belly, soak in water for more than 2 hours, and cut into pieces of meat as shown in the picture.

Put an appropriate amount of water in the pot, put the pork belly in a pot of cold water, cook until the water boils, all the pork belly has changed color, remove the froth

Take the meat out and set aside, filter the water for blanching the pork belly with a strainer, pour it into another basin and keep it, and prepare all the spices

Bring the wok to the heat, put a proper amount of salad oil in the pan, add spices and stir fry on medium and low heat to create a fragrant flavor

Put the spices out and put them in the blanched pork broth, put the blanched pork belly into the oil pan and stir fry

Stir-fry the pork belly until it is slightly yellow. You can also pour out the oil. Pour the spiced soup into the pot. Bring to a boil on high heat. Cover and turn to low heat for 30 minutes.

After 30 minutes, remove the spices and throw them away, add the pork belly

After boiling, add the appropriate amount of tomato sauce and red yeast rice powder, cover the pot and turn to low heat and cook for 1 hour

After 1 hour, add salt and scallion ginger. Then cook for another 10 minutes

After 10 minutes, turn on high heat to collect the juice. Cook on high heat until the soup is slightly thicker, but do not boil the soup dry, just turn off the heat

Make a pot of boiling water, shave the dough into sliced noodles, put the sliced noodles into the pot, and cook for 3 minutes after the pot is boiled.

Put the noodles in a bowl, pour the small stewed pork stew on the noodles, put some coriander on the surface, and start eating
