Soft Corn Tortillas
1.
Sift the cornmeal and put it together with the flour and yeast
2.
Add water and stir well, set aside to ferment
3.
Fermented flour water. Seeing how many bubbles are bulging at the bottom of the bowl, it means that the fermentation is complete
4.
Add sugar and stir well. After stirring the batter, there will be a lot of fine small bubbles
5.
Brush the pan with a thin layer of oil, scoop a spoonful of the batter and gently pour it on the pan, it will naturally spread out into a circle, open the fire, and burn it with a small fire.
6.
After a while, you will find a lot of small bubbles appearing in a honeycomb shape
7.
Turn it over after setting, until both sides are golden. Spread all the batter in this order. You can also pour more batter at a time according to the size of the bottom of the pot, and burn it to save time
Tips:
1. If the ratio of corn flour and flour is different, the taste of the cake will also be different. Please adjust the ratio according to your preference;
2. If the room temperature is too low, please use warm water no more than 35 degrees to adjust the yeast and batter to save fermentation time;
3. I only used 10 grams of sugar, so the cake is slightly sweet. You can adjust the amount of sugar according to your preference. However, it is better to put less;
4. Milk can also be used instead of water, depending on your preference.
