Sour and Spicy Chicken Gizzards with Food and Wine
1.
The side dishes are ready. My sour chili is made by my mother in my hometown. I don’t have one. You can use pickled peppers and pickled pepper water instead.
2.
Put oil in the pot and heat it up
3.
Add the sliced chicken gizzards and stir fry, then add the garlic moss
4.
Pour a spoonful of cooking wine
5.
Add ginger, garlic cubes, red pepper rings, light soy sauce, sour chili, and a small amount of white vinegar. If you use pickled pepper water, you don’t need to add white vinegar
6.
Put the celery segments and stir fry two minutes before they are out of the pan, and pour in a small amount of water. Finally out of the pot
Tips:
The chicken gizzards can be marinated for 10 minutes with light soy sauce, cooking wine, ginger, and garlic diced, so that these seasonings are not needed during the frying process. The chicken gizzards are fried in the pot for a few times and the garlic moss is immediately fried, and then added Celery and red pepper rings, pour a little bit of water into the pan for 1 to 2 minutes, then it can be served.
Note: You can use pickled pepper instead of sour pepper. If you don't have vinegar, you can pour it into the pickled pepper water to achieve the hot and sour effect. The time cannot be too long, otherwise the chicken gizzards will be fried.
