Because I am a native of Guizhou, I have always been concerned about the taste of sour soup. I accidentally found that sour soup with tender inner fat tofu is very good. There is no traditional tofu that is sour inside and out. The taste is much better. Served with simple fried chicken and sprinkled with wood ginger oil, the noodles are very refreshing when served.

1. Remove the bones of the chicken shanks, cut into cubes, use green onion, ginger and garlic, 2 tablespoons of cooking wine, appropriate amount of starch, salt, and pepper, and pickle for 10 minutes. (ps. You can also use other parts of the chicken, personally think this part is the most tender. )

2. Soak the shiitake mushrooms in salt water and wash them. The bigger ones can be torn into smaller ones.

3. Chop the chili peppers or cut into small pieces, if you can withstand the hotness, you can use sharp peppers

Tips:

It would be better to cut the chicken into smaller pieces. Because the chicken was rushed at night and cut into larger pieces, the taste is not as good as before. Other fungi are also suitable for this dish, but I personally think that the small and tender shiitake mushrooms are most suitable, but with the smoothness and tenderness of the lactone tofu. Sour soup will be more fragrant if it is fried with lard. You can put in the cooked noodles for breakfast
