Sour Soup Chickpeas

Remove the bones of the chicken shanks, cut into cubes, use green onion, ginger and garlic, 2 tablespoons of cooking wine, appropriate amount of starch, salt, and pepper, and pickle for 10 minutes. (ps. You can also use other parts of the chicken, personally think this part is the most tender. )

Soak the shiitake mushrooms in salt water and wash them. The bigger ones can be torn into smaller ones.

Chop the chili peppers or cut into small pieces, if you can withstand the hotness, you can use sharp peppers

Cut tomatoes into small pieces and 2 scoops of chopped peppers and put them in a food processor or a soymilk machine with fruit and vegetable juice function. Add a small bowl of water and mix to make a slurry.

Slice ginger and garlic and chop green onions. Tofu slide into the water prepared in advance and cut into pieces

Put a proper amount of oil in the pan, sauté the chopped green onions, add the chili and stir-fry until the chicken is cooked, add the proper amount of soy sauce and oyster sauce to season, then set it up separately.

After the soup is thickened, add the cut tofu cubes, add salt, oyster sauce, chicken essence, etc. to taste, slowly slide the spoon to spread the tofu, and cook for a while to start the pot

Put the sour soup with bean curd, gently pour in the fried chicken, add a few drops of wood ginger oil, sprinkle with green onions or cilantro for garnish. (If you don’t like wood ginger oil, don’t put it)
Tips:
It would be better to cut the chicken into smaller pieces. Because the chicken was rushed at night and cut into larger pieces, the taste is not as good as before. Other fungi are also suitable for this dish, but I personally think that the small and tender shiitake mushrooms are most suitable, but with the smoothness and tenderness of the lactone tofu.
