Spiced Braised Peanuts

Pour the new peanuts you bought into a deep saucepan

Rinse the peanuts with water until there is no sand on the surface of the peanuts

I didn’t have all the ingredients for lo-mei at home, so I just bought a package of stew ingredients, which contained star anise, tangerine peel, bay leaves, fennel and other seasonings.

Add all the lo-mei ingredients, bring to a boil over high heat, and simmer on low heat.

When boiling the brine, pinch the front end of each washed peanut into a small mouth for better flavor.

Put the processed peanuts in brine and simmer for half an hour.

Soak the boiled peanuts in brine. Don't take them out all at once. The flavor of the brine can be better integrated into the peanuts.
