Spiced Soy Soy

Pick out the bad beans

Soak the selected soybeans in enough water for 12 hours, soak them until they are fully expanded.

Rinse the soaked soybeans.

Seasoning needed: light soy sauce, dark soy sauce, rock sugar, dried chili, white button, bay leaf, cinnamon, five-spice powder

Put the soaked soybeans into the boiling pot, add water, the amount of water is no more than the soybeans, add all the seasonings.

Add all the seasonings and bring to a boil on high heat. After a few minutes, change to low heat and cover with a lid to simmer.

Boil until the soybeans are cooked thoroughly and change the heat to harvest the juice

Tips:
1. There is no need to add salt, and it is all seasoned with soy sauce, so the amount of soy sauce is more.
2. If you like spicy food, you can add a few more peppers, or you can leave it alone if you don't like it.
3. If you are making it for the first time, you can put some light soy sauce in first, taste it before collecting the juice, and put it again when it is not salty enough, avoid adding too much too salty at one time.
4. Adding dark soy sauce is for coloring. If you like darker colors, it’s a little bit more. It doesn’t matter if you don’t like darker ones.
