Although I usually don’t eat spicy food, I think of the boiled fish in my hometown, and my saliva still flows, so I hurried to buy fish and make spicy boiled fish, hehe...
Spicy boiled fish is mainly reflected in the word spicy, so when making this dish, I repeatedly use all kinds of spicy, homemade spicy red oil, pickled pepper, Pixian watercress, chili, and Chinese pepper. It is very spicy, two catties. The multiple fishes made a big pot, and this dinner turned into a hustle and bustle, and I enjoyed a spiciness. Let's take a look at the specific approach...

Spicy Boiled Fish

1. Prepare the raw materials

2. Clean the grass carp, remove the head and tail, and remove the cramps

3. Cut the fish into two pieces and chop the fish bones into pieces

4. Sliced fish

5. Add cooking wine, salt, sesame oil, and homemade spicy red oil to the fish head, fish bones and fish meat respectively, mix well, then add egg white and sweet potato starch, marinate for ten minutes

6. Cut ginger and garlic into slices, and cut green onions into slices

7. Wash the dried chili and dried Chinese pepper, put it in a pot and saute until fragrant, set aside for later use

8. Boil the water in the pot, add the bean sprouts to blanch water, and put the bean sprouts in the container after they are cooked

9. Add vegetable oil to the pot, add green onions, ginger, garlic, Pixian bean paste, pickled peppers, pickled pepper, half of the sauteed dried peppers and dried peppers, and stir-fry to create a fragrance

10. Add appropriate amount of water to boil and cook for another two minutes to make the soup full of flavor

11. Add the fish head and fish bones and cook until the fish head is cooked

12. Add fish slices and cook for tens of seconds

13. Pour into the bean sprouts container, put the other half of the sauteed dried chili and dried Chinese pepper on top

14. Pour an appropriate amount of oil into the pot and heat it to 90% heat

15. Drizzle the hot oil, the fragrant boiled fish is ready

Tips:

1. The black film and tendons of the fish should be removed, and the fish meat will not have a fishy smell;
2. When you like a particularly spicy marinade, you can add appropriate amount of chili oil and pepper oil, and then add chili and pepper to the final oil. After frying, remove the pepper and pepper. This kind of oil is poured into the fish for a spicy flavor. More full.
