Spicy Boiled Fish

1. Clean up the grass carp, remove the head and tail, cut along the spine bone, and cut the fish fillets into small pieces

2. Separate the fish head and tail from the fish cubes, add 1 teaspoon of salt and 1 tablespoon of cooking wine to the fish cubes, mix well and marinate for 10 minutes

3. Slice ginger and garlic, cut green onions into small pieces

6. Using the remaining oil in the pot, add the green onion, ginger, and garlic

8. Stir-fried Chinese pepper and dried chilies before adding 1/2

9. Add some boiling water

10. After the water is boiled, put in the fish head and fish tail, add 1 tablespoon of cooking wine and continue cooking

11. After the fish head and tail are cooked, add the fish pieces and cook for 3~5 minutes.

12. Put it in a large bowl and place the remaining 1/2 Chinese pepper and dried chili

13. Heat 50 grams of oil, evenly pour it on the surface, sprinkle with coriander, the fragrant spicy boiled fish is ready to serve

Tips:

1. The salt was used in the early marinating, and the bean paste added later is also salty, so there is no more salt in the soup. If you feel that it is not salty enough, you can add some before it is out of the pot.
2. When making it, you can add some bean sprouts, lettuce and other vegetables to your liking.
